Matcha and chocolate go together like two peas in a pod... and when you add cookies to the mix, life suddenly gets a whole lot sweeter.
Ingredients
150g Plain Flour (plus extra for dusting)
100g Unsalted Vegetable Butter
50g Caster Sugar
3 tbsp Matcha Powder
Pinch of Fine Salt
150g Vegan Dark Chocolate
30g Hazelnuts
Honey and Sugar to glaze
How to Make Matcha and Chocolate Vegan Cookies
Add the flour, butter, sugar, matcha powder and salt into a bowl, and mix by hand until it looks like breadcrumbs. Add a splash of water and keep mixing until it starts to come together.
Press the mixture into a ball and wrap in clingfilm. Refrigerate for 1 hour.
Pre-heat the oven to 160°C/ 320°F. Dust the surface with flour and roll out the dough to half a centimetre thick. Cut into small squares (they will expand in the oven!) and bake until the cookies are lightly browned at the edges.
Whilst the cookies cool, mash up the hazelnuts and melt the chocolate in a pan. Add the nuts and mix it together, and then glaze each cookie with honey and sugar. Dip half of each cookie into the chocolate.
Lay each cookie on baking parchment paper to set.
